Sedgemoor Sugarcraft

What size cake will I need?

Here is a rough guide to how many slices per tier you will get approx:

Tier Size Round Square
6" 12 16
8" 20 50
10" 30 80
12" 50 90
Portions from a standard three tier cake
6" 8" 10" 65 146

Traditionally the top tier is kept for either a christening or first wedding anniversary, so this should be taken into consideration when calculating your requirements.

Can I have mixed flavours?

You can mix and match your tiers i.e you can have a mixture of fruit, madeira, chocolate or carrot cake to suit you and your guests tastes.  Why not ry cup cakes and have a mixture of all the flavours!  Chocolate ganache available too as a topping or filling.

Special Diets?

Vegan, and organic options available on request but may incur an additional cost.

How much notice is required?

As much as possible but about 3 months for fruit cake as this needs to mature and a couple of weeks for sponges.

Fruit cake can be kept stored in an airtight container for up to a year but will need to be re-iced.

Sponges will keep for six months in your freezer, but will need reicing once thawed.

Iced cakes should NOT be refridgerated as this will spoil the icing and sugarcraft flowers.

How do you store sugarcraft sprays after the reception?

You should avoid direct sunlight as this causes fading.  Do not keep in a kitchen where the air can be humid, a glass cabinet is ideal for airflow, you can keep the sprays in a perspex container to protect and display your flowers long after your wedding day.
